Seven Hills Baking Co. aims to return focus to preserving and perfecting classic baking. We start by sourcing only the best ingredients from partners that farm with the same pride and care that we take in transforming them into breads and pastries.
Proprietor and Head Baker
Julien Wagner was born in Paris and moved with his family to Connecticut at the age of five. Wagner knew early on that he belonged in the kitchen, and at age 14, he was apprenticing in local restaurants. Since 1995 he has worked in some of the best kitchens in Boston, Los Angeles, and San Francisco.
In 1999 he turned his professional focus to baking. He has since been on a path of continued learning and teaching—connecting and sharing the knowledge with the community and fellow bakers.
He’s particularly passionate about discovering and mastering global baking traditions.
